My husband surprised me with a shiny new mixer for our anniversary (5 years!) and so I have been {even more} obsessed with finding recipes on the internet. Last night was a cooking success! For dinner I made meatball sandwiches for the first time and they were beyond delicious! Dessert was extra yummy; we scarfed down oreo cupcakes! Want to give these recipes a try?!
Meatball Sandwiches (slow cooker)
In a large bowl mix: 1 egg, 1/3 c bread crumbs, 1 tsp. onion powder, 1/2 tsp. salt, 1/2 tsp. dried oregano, 1/4 tsp. ground black pepper, 1 1/2 lbs. ground beef. Once mixed well, form into meatballs and place on a baking sheet. Bake at 350 degrees for 20 minutes. While this is baking...
In your crock pot, mix: 1 15 oz. can of tomato sauce, 1/2 c chopped green pepper, 2 Tbs. brown sugar, 1 Tbs. yellow mustard, 1 tsp. chili powder, 1/4 tsp. garlic salt, a dash of black pepper.
Once your meatballs are cooked place in crock pot with your sauce mixture and cook on high for an hour. When ready to chow down, toast your hoagie buns, fill with meatballs and sauce, and top with shredded cheddar cheese. SO DELICIOUS!
Oreo Cupcakes
Prepare your chocolate cake mix as directed on the box. Before filling your cupcake liners, place half of an oreo cookie at the bottom of each liner with cream side facing up. Keep other half of cookie for later... Once half of an oreo is in the bottom of each liner, fill 2/3 of the way with cake batter. Bake for 20 minutes at 350 degrees. Once cupcakes are completely cooled, top with buttercream frosting. Crush the saved cookie halves and sprinkle crumbs on top of each cupcake. So pretty and SO DELICIOUS!
